The origin is in Bornholm

It is no coincidence that you can smell and taste Bornholm in our craft liquor.  Most ingredients we find locally in the rocky island.  We only make small batches, in order to be able to better monitor the quality and hone the taste.

Why you get the smell and taste of Bornholm

Few places in Denmark can boast of more varied landscapes than Bornholm. With its long, white beaches and dramatic, rocky coastlines, the deep forests and windy highland plains, Bornholm is a real treasure-trove when it comes to fruits, berries, and flowers. We pick and gather ingredients everywhere in the rocky island. Add to this that we have special permission from the Danish Nature Agency to gather herbs on their plains in Slotslyngen, close to Hammershus Castle in the north of the Island.

The charm of going with the seasons

If you can smell and taste Bornholm in our products it is not only because we use local ingredients.  It is also because we go with the seasons.  As the berries, flowers, and fruits ripen, we harvest the ingredients we need for our various products.  In the summer we pick rhubarbs for our Rhubarb Gin, in the autumn apples, lavender, and rosemary for our Høst Gin.  Consequently some of our products are seasonal and not available all year.  This is part of the charm of going with the seasons.

Small batch demands more love

We distill our liquor in “Lilly”, the small 200-litre pot still at the distillery in Rønne. After 7 hours we get the pure distillate with an alcohol content of about 75%.
This we dilute with good Bornholm water.

Everything is made by hand, and we only produce small batches, so that we are able to monitor the taste continuously till it is exactly to our liking. This is what we mean when we talk about there being more love in small batch production.
